Meal ideas since giving up processed meat/reducing red meat because of cancer link...

I recently came across this diagram
which indicates that processed meat causes cancer and red meats probably cause cancer so we've been trying to eat more meat free meals but I'm running out of ideas!
We're not big fish fans so I've been doing a lot of chicken stir fry's/ veggie lasagne etc. but now the weathers cooler I've been craving sausage casseroles or beef stews. Any ideas?

With processed meats, its the nitrates and nitrites that are known carcinogens; you can buy meat and fish that are cured using traditional methods that are a lower risk.
Its also probably that people who eat a lot of meat miss out on eating other foods which may have a protective value.

If you remove or reduce the highest risk items you can eat lower risk items, just less frequently than you used to.

I really like quorn, and they do good meatballs and sausages for pasta/casseroles.

Could you do things like chicken casserole/chasseur/roast dinner etc...then it’s not red or processed meat? You can also slow cook a chicken in water and use the leftover stock for delicious veggie soups.

Some favourite completely meat free dishes of mine are:

Mixed bean chilli
Fried halloumi with couscous and roasted Mediterranean veg
Mushroom stroganoff
Garlicky creamy cheesy pasta (oh lord)
Homemade veggie pizzas
Stuffed peppers or field mushrooms

We eat a lot of vegetable pasta bakes/sauces. DH made a lentil bolognaise once that he liked...
We often get a larger than we would have done joint of meat to roast at the weekend and then eat it through the week.
Soups in the winter.
Eggs.
