Can I have your fool proof cake recipes? For charity bake sale

Taking part in a charity bake sale and want to make something different from my usual Victoria sponge or lemon cake. But I’m a bit wary as I’m not brilliant at baking 😬
Wondered if anyone could share simple but brilliant cake recipes with me?

While I can bake well, for that sort of thing I use my backup method.

Buy a nice cake and decorate it instead. Trying to make a good cake, get it there in time and have it chopped into pieces too early and drying out is always a faff.

The other solution is to make something which is not a cake and resists the depredations of the charity stall. So cookies, sticky lemon bars, coconut ices etc.

Nigella's chocolate olive oil cake, but with normal vegetable oil instead. It always works, is really easy to make, and everyone loves it. You can use ground almonds which gives you a dense cake, or flour, which I prefer.

Carrot cake is also always a popular one.

Lemon cake you say? That's not ordinary imo!! Yummy!!

Mary Berrys Chocolate Traybake is quick and easy to make. As this recipe says though, you don't need all the icing. I ice the cake in the tin as it's easier. Decorate with small white chocolate stars found in most supermarkets.

I was going to start a thread but have jumped on yours! Hope you don't mind?
Anyone have gluten free ideas?

Bellasblankexpression · 25/09/2019 13:52

Go for it @IamEarthymama
Thanks everyone!
Lemon cake is lovely but it’s what I always make so fancied doing something different.

@IamEarthymama are you on Instagram? Becky excell has an amazing account with all kinds of gluten free recipes including awesome cakes and biscuits.
I don’t need to make gluten free this time so won’t be using any of hers but might be useful for you

Mars Bar crispies Don't faff about with butter and chocolate chips for the topping, just melt a block of chocolate. Simple but popular.

Rocky Road is always good too and you can vary them depending on what you have in the cupboard.

My experience of bake sales is that anything with chocolate is always popular.

Have a look at Jane’s patisserie, I find her recipes really easy to use and delicious!

When dc moan for a cake I always just make muffins. Easier to share and decorate!

This is my go-to, it's so easy and absolutely lovely (from someone who doesn't really like chocolate cake!): www.thepinkwhisk.co.uk/2012/02/chocolate-frosted-traybake.html
It's also better the day or two after you bake it, so no need to worry about freshness.
