Please give me your lunch ideas for a large group including vegans

So we’re going away next month with a large group of friends which includes 3 vegans, 2 vegetarians and a pescatarian- I’m on lunch duty on the Sunday and have no clue! What would you make to keep everyone happy?!

Vegan soup, depending on the size of the group, I'd make one pot of mixed vegetables and lentils and one of potato and leek, or one tomato and one mushroom. Serve with two or three types of bread.
Follow the soup with platters of cheese and vegetarian/vegan dips with bread & crackers. Maybe a fruit bowl to finish.

Make the soups beforehand and freeze in plastic tubs for transportation. Everything else is just to be laid out, so it's a quick and easy lunch with minimal preparation/clearing up on the day.
You don't want to spend all morning in the kitchen!

Is it supposed to be a meal or a light lunch? I’d still be hungry after soup. Blush

But you wouldn't just serve soup, it would have bread with it. And obviously depend on the soup - it could have lots of beans or lentils and veg in it, so would be filling.

We're meat eaters but would be happy with a vegan meal to make like easier for you. Especially if it was something like a hearty bean casserole or red dragon pie. DH's auntie makes it and it's gorgeous.

Make enough vegan chilli or assorted vegetable curries (potato curry, butternut squash, chickpeas and spinach, lentil, mushroom or okra, ones, sliced onion in chickpea flour and water to make a batter, nigella seeds and a pinch of chilli/salt, fry, flatbreads made with self raising flour, salt/nigella and vegan yoghurt, dry fried) for everybody.

No need to worry about rice, just adjust the proportions of spices for each dish so they taste different, lots of things to try, everybody's happy.
