Weekend lunch ideas

FreeButtonBee · 22/09/2019 12:26

I am bored with our standard fare weekend lunches. Need some ideas. I’m trying to avoid pasta as the kids get too much of it at school + play dates. And I like to have to odd Saturday night mac and cheese up my sleeve for when DH and I are heading out. 6yos and 4yo. Not massively fussy but still pretty conservative. I am a good cook and don’t mind doing prep in advance so long as I can do football run/laundry/whatevs around it.

What we have:
‘Bits and bobs’ ie whatever is in the fridg
Fishfinger sandwiches
Tuna melts/ tuna wraps
Pancakes and bacon
Cheese on toast
Beans on toast
Posh sausage rolls
Quiche

Soup and bread. Cheese on the side if you need to add protein.

Crispy chicken wraps - chicken goujons (hot or cold), tomato, lettuce, cheese in a wrap.
Corned beef and baked bean toastie.
Omelette
Mini fry up

Naan or pitta bread pizzas, jacket potatoes.

Soup is a good one, I make batches and freeze portions.

I feel the same as you though, I hate thinking of weekend lunches!

Some great ideas!
I like the idea of Cornish pastors in particular

Pitt’s and humus we do often. Falafels are 50/50. Naan - hmm, that could be interesting.

Soup can be hit or miss. Sometimes I do ministrone (but see pasta restrictions above)

Pastrami - hmm, DH and I like it haven’t tried the kids. But worth a go

It’s such a torture and I like for us to eat together as much as possible at the weekend as we don’t manage it during the week.

We often have wraps but at the weekend I tend to cook the main meal at Lunchtime and have something light in the evening (kids like homemade pancakes, boiled egg on toast or fruit salad cheese and crackers)

Hummus is lovely
Grilled halloumi
Sandwiches
Jacket potato

I found this in an Asda magazine and it's fantastic ... fairly healthy and a real crowd pleaser.

  • whole chicken which you rub with a bit of oil then fajita seasoning all over
  • Roast in a dish as per weight with roughly chunked wedges of white and. sweet potato
- serve with coleslaw (I LOVE Asda's lazy bag you get in the salad aisle) and if your a pig like me slices of baguette and butter

I'm hungry now Grin

Sorry forgot to say Todd the spud chunks in a little oil first then arrange around the bird. Base with the juices a few times.

So so easy.

Are we thr only family that do fend for yourself lunches at weekends? Sandwiches/crisps and bits for the kids. Or Bacon sandwiches/egg/beans on toast.

BrutusMcDogface · 22/09/2019 16:44

I usually make the kids’ lunch and they all sit together but adults have whatever they want, whenever.
