Amazing birthday present for dh - ideas need please

So it was dh’s birthday in June. We went on a city break to Spain which was great but luggage was cabin only so took him a voucher . I knew he wanted a new lens for his camera too, which I couldn’t choose - he has bought once since. Still - it wasn’t very exciting for him.
We have our 30 th wedding anniversary in October and have booked a luxurious weekend in Scotland..Would love to be able to give him a more exciting present for this but am bereft of ideas . He loves food/cooking, gardening and walking . And beer . Anyone able to help

What does he like to photograph ? can it be linked to a day out / a experience voucher .

While in Scotland see if you can find a brewery that does tours .

A Shopping spree at his fav outdoor shop Blacks , Go outdoors , etc

Some great suggestions . Thanks.Had thought about a photography class before but he is doing evening classes. However a day class somewhere lovely in Scotland would be good. Off to look at the hamper ideas were on.
