I need food inspiration. Help me!

I am so bored with choosing what we eat every night. I've been doing it for over 30 years and I am done.

It is me, DH and 21yo DD2 at home. DD2 is a decent cook and will do stuff in the kitchen. DH isn't much of a cook and works long hours.

I need some idea for evening meals. We eat most things but DD2 doesn't eat beef. Give me some inspiration? Even if you just tell me what you are eating tonight or this week.

tonight we are having homemade pizza with some potato wedges. i love the change4life smart recipes app and i get a lot of meal inspo from there x

Chicken, or mixed fish, fajitas. Buy ready made fajitas, stir fry the chicken or fish, stir fry mixed veg and serve with guacamole and sour cream.
Veggie lasagna.

Im fed up too...this week we've had..

Toad in the hole
Peri peri chicken with oven chips and corn on the cob.
Steak fajita thing but without the wraps served with sweet potato wedges
Sausages with home made potato salad

Also have quite a lot...

Thai green curry... jar of curry paste plus coconut milk and chicken, veg

All standard mince based dishes

Stir fried

I need inspiration...

Roasted new potatoes with Mediterranean veg and chicken thighs in a tray bake. Chicken/salmon stir fry. Sausage mash and veg. Thai curry with fish/chicken/tofu. Chicken burgers with sweet potato wedges. Spaghetti with sun dried tomatoes and feta. Egg, chips and beans. Just a few things we've eaten this week or will have next week

Tonight we are having Ikea style Swedish meatballs with mashed potato. Doesn’t have to be minced beef- minced chicken, pork or lamb will do. Fry up some onions, brown off the meatballs, add balsamic vinegar, veggie stock and reduce until meat is cooked then add a dollop of cream cheese. Sprinkle with fresh parsley and add some cranberry sauce as an accompaniment. Lovely. Very quick and easy.

Could you have a brainstorm about things you've done over the years and make a list, particularly things you haven't had for a while?

It's Friday, easy at ours, because it's chippy night!

Haven't had salmon en croute for a while or lamb shanks. DH made toad in the hole the other day. I'm a big fan of gammon with spuds and broad beans in parsley sauce. We like breakfast for tea sometimes - bacon, eggs, beans, hash browns. A nice one I learnt from a MNer is pork sausages, baked spuds and sliced sauteed leeks stirred through with wholegrain mustard - v. nice for autumn and winter.

Tonight we are having tuna nicoise salad using defrosted tuna steaks (from Lidl) lettuce, green beans, spring onions, hardboiled eggs, semi warm new spuds and some crusty bread.

Thank you. Lots of new ideas to choose from there. I plan on asking them both for a list of 10 meals they really like. I will add 10 too. Then hopefully we will have loads of choice over the next month.

I’ve just discovered toad in the hole where you wrap the sausages in bacon first and add cheese to the batter.
Also chorizo & prawn jambalaya in the slow cooker is so simple.
Cajun chicken tagliatelle is my go to - you just need tagliatelle, double cream, chicken shredded up, cheese & Cajun spice - so easy and so super tasty!

Favourites in this house are;
-Tesco’s sweet chilli hot smoked salmon with fillets with cous cous
-Salt and pepper chicken wraps (marinate the chicken in salt and pepper seasoning) with haloumi cheese
-Old El Paso fajitas either fiery jalapeño and tomato or roasted tomato and pepper

  • Pepperoni pasta bake
  • Buffalo chicken

Can you tell I like spicy things 😂
