Vege Meal Planners PLEASE HELP

I'm stuck in a very dull loop of meals and need some inspiration. Family of 3, 1 16month DS.

We only eat vegetarian, no quorn though as it gives DS tummy ache annoyingly, we ate it a lot before he came along. Please help with your top ideas/meals/recipes. The easier the better as I'm pregnant with DC 2 and working so time is tight.

If anyone's got a simple roasted veg lasagne recipe they recommend that would be helpful too.

@RemusLupinsBiggestGroupie don't underestimate the tinned tomatoes 😂 I use them almost every day!

Just made Jamie's sweet and sour vege from the new book. Very tasty, ridiculously easy, and not a tinned tomato in sight.

@KurriKawari the lasagne went down well on Saturday. Ds mainly picked out the cheesy pea mix and avoided the asparagus but I snuck some onto his spoons. Me and DH really enjoyed it and pretty easy to make now I've done it once.

The lentil cottage pie I made yesterday was a massive hit. Used tinned green lentils as a few of you recommended and loads of veg, I put sweet corn in to entice DS (it's his fave) and he wolfed down the whole bowl. Normally hates mash so I'm so happy about that.

Trying @Ricekrispie22 recommended satay curry tonight. Will give DS leftovers tomorrow.

Thanks guys, I keep looking back when I'm meal planning for more ideas.

This week my meals have been
Pasta with chilli and tomato sauce, kale and mushrooms
Tonight is falafel salad wraps
Tomorrow fajitas with green lentils and portobello mushrooms
Friday is massaman tofu

Tonight we had a speedy supper of stuffed jacket potatoes – microwave spuds, dig out the filling and mix with whatever (I fried onions and mushrooms in butter). Dollop it back in the jackets and all into the oven with loads of cheese on top. Serve with baked beans!

Dal (with red lentils, they cook in about 15 mins) with spinach and rice is a quick one and can be made non-spicy for kids.

We did a Spanish veg traybake last week, sweet potatoes and loads of different veg chucked in a dish with chopped tomatoes, olives, capers, some red wine vinegar, lemon and herbs. Easy one-pan meal!

I love tinned green lentils. I'm the only veggie in the house so when DH and DC are having something like a roast dinner I make a really quick lentil Dahl with a tin of lentils and some spices. All chucked in one pan and ready to go as soon as it's hot!

I've also recently tried Asda's mushroom sausages which were really lovely, cauldron Lincolnshire sausages (gorgeous) and some more Bollywood sausages that DS nicked and kept eating when he got home from school so I didn't get any :(

Butter bean and sausage casserole with mash is my all time favourite comfort food. Perfect for these dark and rainy evenings.

Your DS might be a bit young for these but mixed bean chilli wraps are lovely, with a solider of sour cream and some cheese.
