Lads, it's freezing out. Hit me with your favorite pie filling. I have a dish and some pastry but no standout favorite candidate for this evening's dinner yet!

Tomorrow I'm doing a chicken, leek and mushroom pie, since I've just stripped a roast chicken (carcass boiling up for stock) and there's enough left.

Simmer chopped leeks in the very reduced chicken stock, drain but retain stock.
Sweat sliced mushrooms in butter or olive oil or,both, add flour to make a roux. Add chicken/leek stock, a chicken stock cube or salt/pepper to taste, plus milk to right consistency add a good splash of white wine.

Add chopped cooked chicken and leeks, heat through thoroughly.

Could use pastry but I top with lots of mash, plus cheese on top, whack in the oven until cheese is melted and crispy brown.

Can use a small amount of chicken and add more mushrooms.

Vegetarian/Vegan - mushrooms sautéed with garlic, with spinach and chopped hazelnuts with onion gravy.

Paul Hollyowood's "my nan's pie". It's simple af and with a good dollop of gravy and chips/mash it's super comfort food.

I did chicken with leek and mushroom the other day. Took ages though.

I am going to teach my dad how to make pies and think we will start with steak and ale.

I want to make another one soon but will do a vegetarian one. Not done and recipe research for that yet though.

Blatant placemark.

At the age of 41 I finally got round to buying baking beads and need to use them on something.

Have got a random bottle of beer in the bottom of the cupboard. Might do a steak and ale pie.

Gosh now I want pie. I do love beef soaked in red wine and Stilton or chicken, leek and cheese pie.

Mixed Bean Chilli Pie or Spanokopita are my favourites. DH would say meat and potato. The DSes would agree with DH, I suspect, though they are both rather partial to my cheese plate pie...

Fish pie with pastry not potatoes. Assorted fish plus prawns and scallops in a creamy lemon and herb sauce.
Difficult to beat steak and kidney or steak, ale and mushroom.

Left over roast! Cook double of everything on Sunday the chop up all the left overs add remaining gravy cover with pastry. Yum.
