Takeaway pizza - quick question

If ever you watch a chef making pizza, they often brush some sort of liquid around the edge of the base before putting it in the oven. Does anyone know what this stuff is, or what it is likely to be ? Thankyou.

Just plain old olive oil

One place I know seems to put egg white on there (I only know because a friends little girl is allergic and she had a reaction).

That's interesting, LordProf. I suppose the idea is to put a little glaze effect on the cooked crust, a kind of organic varnish. Admittedly, I've been putting olive oil on my homemade pizzas for years, not actually knowing if it was olive oil (or egg white) that the chefs use. Mine don't come out glazed !
