Rice wine substitute

As above. Google says white wine, gin or apple cider but to add some sugar.
I've got some rhubarb gin I've made which is more like a liqueur.
What do you think? It's for dressing cucumber to go with salmon.

I’d use white wine vinegar if you have it. Or apple cider but white wine is closest to rice wine vinegar. Think the gin could be too sweet and overpowering.

Ken Hom always used to say that you could use dry sherry instead of rice wine, so I'd use dry sherry if you have it.
But I also think the rhubarb gin would work well, a very interesting combination.

Gone with the gin, I don't have sherry.
I tried a bit purely in the interest of my guests of course and it's good!

Whoops! I'm doing approximately 16:8 diet and having slurped the gin realise I should have had something to eat a while ago and so had nothing since yesterday. Feel a bit squiffy and guests arriving in an hour!
