I'm stuck in a rut with cooking and DH is no help as he cant make choices to save his life so its always down to me.
What can I cook that is tasty and summery but also filling (DS is a swimmer and eats his body weight in calories)?

What do you have in the cupboards/refrigerator?

Make this feta and roast veg salad and serve with some poached salmon.

I have bread, marg, milk, carrots, several bottles of wine, coco pops. Not much help I appreciate though Lidl is over the road so I can get things in.

I did puff pastry sheets yesterday - with rounds of hard goats cheese, spinach and roasted red peppers on one and soft herby cheese with 1/2ed cherry tomatoes and pesto on the other.

Gorgeous and very very easy.

Add a luxurious creamy potato salad to bump up the cals for DS and a leafy salad.

FusionChefGeoff · 25/08/2019 14:27

Ha ha I reckon even Ainsley would struggle with that in the mystery bag!!

Choco-carrot au Vin anyone??

TheOnlyLivingBoyInNewCross · 25/08/2019 14:28

Risotto. I make one with mushrooms and leeks, and one with chicken and peas - both delicious.

Grill some lamb or beef with some fresh herbs. Have them with a y salad of feta and watermelon, leaves and olives. Serve with flatbreads or chunky fries.

Today I did a two-frying pan lunch from frozen. 3 people.
4 thawed boneless fish fillets in water, salt and pepper, lemon juice and white wine. Boil gently for 8 minutes. Knob of butter if you like.
Grilled vegetables (frozen). Potatoes, aubergines and courgettes. Fry for 12 minutes.
Then we had fresh fruit and yoghurt or ice cream. No faff and minimum clean-up.
I’m sure all that is available from LIDL (their Greek yoghurt and Bourbon vanilla ice cream are my favourites).

Ooh fab ideas, I am thinking of doing the roast veg and feta salad and getting DH to do some lamb and chicken on the bbq. Then washing it down with the wine. I'm off to Lidl to see what I can find (hopefully they do feta)

PP’s watermelon and feta salad is delicious, too!

Cook anything and add shit loads of potatoes and butter to it. That's what my aunt does. My uncle also used to eat his body weight in everything.

happypotamus · 25/08/2019 14:46

I am doing roasted veg and pasta, probably leaving it to cool before eating so it is more like a pasta salad. Another day I am making puff pastry tarts with pesto and tomatoes on. Tomorrow DH is doing hummus and falafels and salad in wraps. That's my heat wave meal plan (DH is vegan so that also affects what I can make)

RebeccaWrongDaily · 25/08/2019 14:47

We already had bacon and scrambled eggs.
Steak, jacket potatoes for dinner, am making coleslaw and tzatziki and mozarella salad. Berry with meringues and whipped cream for pudding.

marblesgoing · 25/08/2019 15:39

Just been and picked up some bratwursts and brioche buns so having hot dogs with pine nut and pesto pasta cheesy coleslaw, nachos and dips.

Also bought some meringues cream and strawberries for Eton mess after.

Am starving so could eat it now just trying to drag it out

Disposable bbq. Some corn on the cobs, halloumi and veg skewers, low fat burgers, skewered prawns in garlic oregano and lemon juice, big salad with some pasta if needed, coleslaw, open the wine. Jobs a goodun

Myshitisreal · 25/08/2019 15:43

We're having homemade 🥔 wedges, frozen sweetcorn, and homemade veggie sausage rolls (frozen pastry) all at husband request. I was going to make tofu.

How your dinner goes well op. 👍

Go to M&S, spend £45 and come out with 3 bags of shopping and nothing for tea... (guess where DH and DD17 have been.)

I looked through and said, Prosecco, cheese puffs, and Mexican dips for tea and raspberry Viennese whirls with ready to eat nectarines for afters it is...

We are having takeaway. (though on second thoughts...)
