I have a glut of frozen pork. Will this work or will it be grey and disgusting?

I have two packets of extra lean pork stir fry mix and a packet of lean pork medallions, all frozen. I'm thinking of slow-cooking them in the oven with stock, then adding a BBQ/chipotle sauce and having it with jacket potatoes. Will it be lovely and tender and a bit like pulled pork? Or will it be grey, stringy and revolting?

Lean pork doesn’t really cook down to falling apart, saying that I have many a time out lean pork loin chops into bbq sauce and cooked then low in the oven that way, then taken the lid off out grated cheese on and cranked up the heat and they are delicious. So I would miss the stock bit out and quickly brown the pork then add the BBQ sauce and cook. I add sliced peppers or sweet corn too sometimes.

It will be awful.
Sorry OP- pulled pork etc. need fat to make them unctuous.
I’d either just stick to making a stir fry with it, or just make stuffed jacket potatoes if you’ve got some cheese and veg in (like massively loaded potato skins)

Ah ok! Could I add fat in the form of butter or something?

Am worried about just cooking it quickly as it's been frozen and DS1 won't eat meat if it's at all tough.

Sorry, I mean there needs to be fat within the meat. Adding fat like butter won’t do much.

I’m afraid pretty much regardless of what you do, this is going to be tough (particularly as im assuming you’ll be defrosting in the microwave first?) defrosted, lean pork just always seems to
end up chewy in my experience- I’m quite a good cook and it frustrates me so much I don’t buy it anymore.
