What is everyone planning for dinner tonight?
Need to pop to shops but not sure what for. DH has been away all week with work so he fancies something nice, maybe spicy as he has had bland food all week. Trying to save money so no takeaway sadly.

Thai beef massaman curry and jasmine rice! It's a cook it yourself but with the spices, peanuts, coconut milk in a pack. Had it before and it's delicious

No idea. We're child free for the next 2 nights but can't decide whether to go out or not. Don't know what I fancy so watching for inspiration!

I've got a sweet potato dhal in the slow cooker, and I'll make some flat breads to go with it later.

we're out for an Italian meal with friends later but during the week we had chicken with a paprika sauce with steamed potatoes and broccoli two nights (made a double batch) and then sticky pineapple and cashew chicken with rice last night. Lots of chicken as some in the freezer and mistakenly bought more.

Tacos

Brown some beef mince, toss in the packet of seasoning that comes with the taco shells and a tin of kidney beans. Simmer for a few minutes. Serve with taco shells, shop bought guacamole and salsa, shredded lettuce, cheese and sour cream. It's a favourite in our house.

green curry: garlic and green chillis pounded to a paste and fried in a little oil, then seal/cook chopped chicken and onions. Add about 3 handfuls of finely chopped coriander, stir quickly and add a can of coconut milk, heat through and serve with sticky rice. Very quick, light and fresh.

Smoked haddock risotto! With leeks, spinach, cheese and creme fraiche! I will probably add some chilli for chilli loving husband.

We are going out for a child free dinner! I am so excited! I've been catering for 15-20 all week and the last time we were out together was November so I'm very happy!

This week I have done stuff like grilled chicken and salad, paella, lamb curry, cooked ham and salad, pulled pork rolls.

Griddled tender stem broccoli, green beans and courgettes with a poached egg. It’s just me and this is about as much effort as I can muster today.

I'm going super simple with some BBQ marinated beef ends or Chinese pork ribs from the butcher over rice with salad :)

Trying to be healthier even though I smashed two bags of crisps before 9am Blush

I’m doing loaded nachos tonight. Homemade black bean and sweet potato chilli with guacamole, jalapeños, melted grated cheese, sour cream and salsa and salad with tortilla chips. And wine. Can’t wait!
