Help me choose a holiday

I want to go on holiday at the end of next week but haven't got around to booking anything yet. I'm lost with where to choose.

Travelling solo.
1-2 weeks.
I don't particularly like heat but need some sun!

I love animals, beautiful places, chilling by a pool or on a beach, places to visit particularly places like cathedrals.

Max of £2000 but preferably less.

Too late for visas for most far flung places!
I don't want to go to Turkey, Cyprus or Italy (for different reasons).

I can fly from any easy airport: Edinburgh, Msnchester, Glasgow, Newcastle or even London as it's easy enough to get there on a train.

OP I’ve just got back from Seville and a friend stayed on and did Alhambra and then Malaga so it’s very easy to see a couple of different places in that time frame. Lots of historic things to look at but also loads of hotels with rooftop bars with pools.
Very cheap to eat/drink out, glasses of wine around 3 euro. The only thing that might concern you is the heat but that will be the case everywhere.
