Can I cook this chicken?

So I took 4 chicken breasts out the freezer yesterday morning and have defrosted them overnight in the freezer with a view to doing a chicken dinner today.

We have now decided to go out for the day which will include a restaurant meal so I can't make the chicken dinner until tomorrow. Will the chicken be ok to cook? Over 48 hours out the freezer?

Yes they'll be fine as long as they were well within date when you put them in the freezer. Remember they're probably only just defrosted now as well.
