I followed the recipe like I've done a million times before

And yet when I turned it out the loaf tin this happened.

Where did it all go so wrong?

When I turn out something like that, I almost certainly forgot sth important by thinking I'd already used it and putting it away again.
(stone bread anyone?).

Seriously, I reckon it's dodgy flour or you forgot a major ingredient. Poor batches of flour can wreck cakes.

Didn't let it cool in the tin for long enough so it collapsed on turning out? Our kitchen is about the same temp as the oven at the moment so things take about 3 days to cool down.

Tin not greased/lined enough, so it stuck and ripped?

Grin at all these comments.

So it's a vegan banana bread recipe that I use maybe once a week and normally it's fine.

The only difference is I put frozen ginger in it and possibly the bananas were a bit smaller than usual.

No one seems to mind though as it still tastes of cake and people are just spooning it into their mouths as they go past. I've put it into a cake tin and Dh has just asked me where 'counter cake' has gone.

Heat doing something to the bananas maybe. Yesterday the skins were thin and black but they were a normal ripeness inside.

I have become wise to the bastardness of banana bread and now make banana muffins instead, which are cunningly contained in a cosy case. Even if they suffer a fatal implosion, all the crumby crap is still kept cornered.

Incidentally, i made a batch on Tuesday and learnt another very valuable lesson. Turns out it’s VERY tricky to shake out flour in front of a fan foofing at full blast ⛄️
