Meal ideas/planning - some restrictions!

I would love some meal ideas/a meal plan that fits in with these requirements if anyone has some ideas! Breakfast and lunch are fine, it’s just dinners and I’m running out of ideas and am eating a lot of ready meals!

Meals to feed one person

Not LOADS of leftover ingredients

Not batch cooked food as it can’t be frozen and I don’t want to eat the same thing for days on end

I usually eat toast/cereal/sandwiches/salads for breakfast and lunch so would like something different for dinner

I love cooking and I like most foods and no allergies

Any kind of meat or fish fried, grilled, roasted served with accompanying vegetables.

Omelettes.

Mussels in white wine and garlic.

Ravioli (fresh pasta sheets and just make as many as you want.)

Shepherds pie (small pack of mince, small amount of mashed potato, just make enough for two servings.)

Soup noodles - udon noodles particularly from Asian supermarkets tend to cone packed in one-option servings.

I mean, anything really! Buy smaller amounts of loose ingredients and small oven dishes and halve quantities in recipes designed for four servings. If you like cooking presumably you’re happy to do this daily or every other day?

Frittata

Pasta carbonara or pasta primavera

Fish can usually be bought in a portion size suitable for one

Stir fries with vegetables and noodles, add prawns or sliced chicken if you like

Mushroom stroganoff

Thank you! I am happy to cook every day, I’m just in a bit of a rut I think. It might be the weather, I don’t seem to ‘fancy’ anything, I’m really uninspired.

Risotto, of whatever description.
Gammon, fried egg, chips and peas.
Poached salmon, veg of choice and new potatoes.
Steak, fried mushrooms, sweetcorn and baked potato/side salad.
Fish cakes.
Burger, with all the trimmings.
Baked potato with tuna mayo.

Tesco has a range of one-portion tins of tuna done in different dressings such as this lime one www.tesco.com/groceries/en-GB/products/295543378
John West does a similar range but in pouches, which tend to be more expensive www.tesco.com/groceries/en-GB/products/252424032 I usually mix them with some pasta or gnocchi and whatever veg I have.

@AdaColeman, I think the posters who help deserve thanks, I like it when posters appreciate the advice given, so I always make sure I do.

I’m not sure I’ll be cooking today (well, I might be cooking but I won’t be cooking any food 🤣)

I have added salmon, stir fry ingredients and eggs to my shopping list though. I will be eating fish and veg, stir fry, frittata and gnocchi when I can bear to cook again!

Corn on the cob! I haven’t had that for ages, I’ll have some of that soon too, I love it with garlic butter on it.
