Dinner tonight - this weekend

We are having Italian meatballs with cheesy polenta and asparagus.

So easy. Fresh, pre-maid meatballs, onions, jarried pasta sauce and fresh basil. Polenta and parmesan on top.

DH who is vegan is having polenta with mushroom pasta sauce

Yesterday we were out for dinner.

Tonight I was going to make a roast but we’ve decided on roast chicken with dauphinois potatoes, broccoli, carrots and green beans.

Last night - lamb koftas, grilled halloumi, pitta, Greek salad and dips.
Tonight - chicken thigh traybake with baby potatoes and various veg....it’s marinating in garlic olive oil/herbs as I type as we’re out all day and I’ll just bung it in the oven about 5pm. I also have a beef curry in the slow cooker for Monday/Tuesday nights.
