Minor mysteries - belgian buns

Does anyone know what the bright yellow stuff you sometimes get in the "layers" of a belgian bun is? I ate one today and wondered.

I'm confident MN will come up with a sensible answer 😊 If anyone else is pondering a minor mystery which they cba to google then do share!

You're right they do! Lemon curd, who knew!? I would not have detected that, will definitely be more delicate when scoffing sampling my next one, give the taste buds a chance to catch up 😄

I'm intrigued about serendipity's marzipan-y custard now. I don't have any suggestions, which is hardly surprising as it seems I'm none too sophisticated in the baked goods part of my life.

Lemon curd!? I have some in the fridge!
Need to make Belgian buns tomorrow. Have found a recipe to make them in a bread machine...

See, I like your original suggestion of the melted fondant icing Rose, but have to concede that recipes (the whole two I looked at) do seem to have lemon curd in them. Do come back and let us know how your buns turn out!
