Favourite sandwich

I'm bored of the same stuff and with the glorious summer weather I want to switch it up a bit. Some nice open sandwich ideas with fresh leaves etc......................

I used to work in a café that did smoked salmon, crayfish tails and rocket on malted brown bread, they were amazing.
I like fresh fig and gorgonzola on bagels too. Never put anything green on but I'm sure you could.

Fish finger

Love a fish finger sandwich.

@vampirethriller that sounds ace - I tried to find figs the other day in the shops and there weren't any......

Beetroot and mint dip as a base, topped with crumbled feta, quartered piccolo tomatoes, chopped yellow pepper, a drizzle of decent olive oil and lemon juice and a loads of salt (preferably maldon) and freshly ground pepper. All on top of something nutty with a good bit of structural integrity. Or in a wrap.

I had salami slices with leaves and salad cream earlier, heaven.
I find jam sandwiches really underrated, they're awesome!
Cheese and tomato
Ham salad
Egg mayo
Tuna salad
Even just leaves with cucumber and salad cream is good!!!
