Family friendly vegetarian menu for a week

I have vegetarian family visiting for a week. I don’t want to cook different dinners but want to find dishes that will suit the veggie requirement but also appeal to a few fussy toddlers. Any ideas great MN minds?

My favourites for a crowd with mixed preferences:

Bean chilli topped jacket potatoes, but do a topping buffet alongside with guacamole, sour cream, cheese, jalapenos, chopped onion or spring onion.

Salad bar/picnic dinner- basically, make as much as you like from scratch and buy whatever else. Most of it can be finished for lunch the next day.

Falafel pitas- like with the above, just add all the topping options to the table.

Good idea re the Quorn nuggets. Sainsburys also do vegetable fingers, which my two used to like when little.

And veggie stock. We never make it with meat now, it's delicious!

The other thing we do is HFW north African stew, it's a great hit.

Veggie chilli goes down well too

I use carrots, sweet potato and parsnip instead of squash, never have saffron and add a bit more pasta.
Serve with giant couscous and Jamie Oliver's yogurt flat breads

Unfortunately one of mine is Quorn sensitive - her 2 days of raging diarrhoea was not fun after a party mum decided to serve Quorn nuggets calling them chicken nuggets... would always ask them, or try to go for the vegetable/pulse option over quorn... just in case...

We do pizza beans - did not know there was a recipe for them! - we fry some mediterranean veg, garlic + onions, add a couple of drained tins of cooked beans, tin of tomatoes, knobs of mozzarella, cover with cheddar/double gloucester and sliced tomatoes... lush...

we usually have it at the end of a shopping week - you can add any leftover veg before the cheesy top, so we cook up what's left at the bottom of the fridge and add it - leeks, carrots, mushrooms, kale, anything really.

Oh I am genuinely excited by the pizza beans, what a great idea. I will even give that a go for normal dinner before the veggies arrive.
