Why isn't there a window at the back? I'm sure caravans used to have windows at the back?

They still do.

I suspect it depends on the internal layout.

driving down the motorway today every caravan we saw had no rear window just a large expanse of whatever they are made of, they just had one large window at the front.

It depends on the internal layout. Behind this panel might be a bathroom and shower with a side window, or the head of a double bed. Ours has a rear bathroom window, but you can't see through it from the front as it is central and the door is too the left.

We don't have a rear window in ours as we have a fixed bed at the back.

Having spent too many hours of my life stuck behind the wretched things on twisting, narrow roads in Scotland, I've always wondered why the bloody things are called "Swift" when they are anything but!

As someone else said, it depends on the internal layout. Often a rear bathroom will mean no rear window.

We nearly bought one that did, but in the end bought one that didn’t (bunk beds across the back).
As others have said it just depends on the layout; however most appear not to in my limited experience.
