Small holiday budget

I am hoping for some advice on where/when to book a holiday. Long boring story of why, but the key details are:

Budget 1500-1700
Family of 4
All have passports
Can only get away for 7 nights 24-31 August.

We were looking for a cheap deal abroad, bit i can't find anything in budget. Is it likely that prices will drop or rise as we get closer to the dates?
I have seen uk caravan parks, for umder £800 but cannot work out an estimated budget for spending money. Would £700 for meals & entertainment be enough in the uk?

Any advice would be great, I'm stressing far too much about this.

I don't think eurocamp type things are always cheaper if you book this late to be honest!

Stanstead is always cheaper to fly from by quite a bit in my experience

I would second the idea of Eurocamp/Canvas or similar. We went to the Loire valley at that kind of time last year. We stayed in one of their tents (with decking, fridge, electricity, proper beds) & it cost us under £1000 including ferry. The road tolls add a bit more (maybe £100 but can't remember).

We spent virtually nothing on entertainment as the site had a swimming pool complex with slides etc, fishing, playground, table tennis etc. Also free kids clubs if you so desire. We looked round a couple of castles at around 20 Euros per castle. For food, we spent not much more than we do at home. We ate simple breakfasts & lunches (croissant, baguette, ham, cheese, salad etc) then bbq or pasta for dinner & we bought wine & beer to drink at the tent. Would thoroughly recommend.
