Urgent! How do I make my rosti crunchy?

Urgent as it should be done and is just semi cooked grated potato and not nice and brown and crisp like the picture. And I’m hungry

Heat up, butter dotted on top. Don’t move it till a thick golden crust forms on one side and then flip over and do the same on the other side. Keep an eye to make sure it doesn’t burn.

I’m assuming it’s in a frying pan and not the oven! The above instructions are for frying.

Dot a bit of butter or drizzle some olive oil over the top and put it under a very hot grill.

Grilling won’t crisp is, it needs full contact with a heat source (frying pan bottom) to hold the oil to the potato to form a crust. Grilling will just burn the parts that are higher than the others and leave the rest soggy.

Did you squeeze all the water out of the grated potato before you fried it? (Unless you're using already-cooked potato.) You need to put the grated raw potato in a tea towel and squeeze it over the sink, or it will be all claggy. And thinner ones will be crispier than potato "cakes" in rings.

Hot pan with hot butter... do not be tempted to stir it! Wait til almost burning and then flip over and repeat on other side.
Am hungry too now Grin
