What cake or bake should I make for this week's lunchboxes?

Something nice and solid, but not malt loaf or date cake (done both of those recently) nor flapjack (not in the mood). Don't have any bananas or lemons. I need inspiration!

Sticky ginger cake? Send any extra this way Grin

Madvixen · 16/06/2019 17:05

What ingredients do you have in your baking cupboard?

Sadik · 16/06/2019 17:07

Probably most things that aren't lemons or bananas! Assorted dried fruit, nuts, treacle, syrup, various sugars, flours.

Apple and cinnamon with Demerara sugar on top

Just thought - I have lots of blackcurrants in the freezer that could do with using, maybe could do something with them

Donna Hay blueberry and yoghurt loaf [[https://www.donnahay.com.au/recipes/sweets/cakes/blueberry-and-yoghurt-loaf
here]]. Tasty with the added benefit that it's v easy to make!

Can I ask op, is your malt loaf really "malty" and if so, please may I have the recipe?

Sadik · 16/06/2019 17:14

That looks good Singingcricket. I make Nigel Slater's malt loaf but swap the prunes for dates as I prefer it - & yes, very malty

Blackberry and coconut squares www.bbcgoodfood.com/recipes/12971/blackberry-and-coconut-squareshere. Award winning recipe apparently! (Haven't tried it myself!). Always make crumble with blackberries... .

Ooh thank you Sadik! Much appreciated! I love a good malt loaf and so far the recipes I've tried have been nice but a bit bland. That one looks really good!

Singingcricket · 16/06/2019 17:22

Again, I haven't made them but these blackberry pie bars look good from the Novice Chef.

Sadik · 16/06/2019 17:30

I've tried a few malt loaves and it's definitely my favourite :)

Sounds very promising! Smile. I now just have to source some malt extract (abroad)... .

Blueberry muffins.

Peppermint crunch 😍

Bara brith always goes down well here, or some kind of tea bread. However, you do need to soak the fruit overnight so you won't be able to put them in lunchboxes tomorrow.

Sadik · 16/06/2019 18:20

I made a streusel traybake in the end - very similar to those blackberry pie bars.
