In Fathers' Day?

Father's (I don't think it's this one)
Fathers' (I think it's this one as more than one father.)

you have just one father - not multiple - therefore it is Father's Day

Everything I've seen on cards and online is "Father's Day", but I would agree it's a day for all Fathers so it should be Fathers' Day.

It's Father's Day. But I always think it should be Fathers' Day - the day for all fathers.
