Tried and tested cookie cutter recipes.

Does anybody have a favourite cookie recipe that works well for cutting cookies? The dough has to be .5 cm. thick. All the recipes I have tried have been a bit bland. Would you use salted butter? The design of the cookie is the important thing, but I would like the biscuit to taste too. Thanks.

I use a standard 'shortbread' recipe for this kind of thing. It's soft but not too soft - easy to cut, easy to reshape the leftover bits.
Cream 4oz butter (I always use butter and never notice if it's salted or not!)
together with 2oz sugar
When it's soft and light add 6oz plain flour and mix until it all comes together. Roll to required thickness and cut.
You can also add other ingredients at the same time as the flour - i.e chocolate chips, nuts, raisins

Bake at 180 for around 20 mins - dust with fine sugar (or not - up to you)

They are delicious and crispy!
