What are your quick cook (veggie or fish) meals?

Two nights a week we all get in late and need a quick, easy meal to cook. When we've been organised we've cooked extra the day before or whatever.

But when we haven't I need something really quick and easy I can pull put of the cupboard or freezer.

It usually ends up being pizza with crudites or pasta & shop sauce (sometime quick cook tortelini.

Looking for some inspiration! What are your quick cook meals?

(We eat a fair bit of stuff cooked from scratch on other days, don't mind if It's processed as long as it's not totally unhealthy & quick!)

Spaghetti with garlic, fresh red chillies and flat leaf parsley.

Takes as long as the spaghetti takes to cook and it’s bloody lovely!

@resisterpersister I am such a huge fan of the 15 Minute Vegan book (there are two others, also: 15 minute Vegan comfort food and 15 minute vegan on a budget) as I work evenings and it's perfect for when you want a proper meal in no time at all!

‘kedgeree’ far from authentic but put basmati rice ( it cooks quickest) in a pan with water and eggs. boil for 8 minutes and take eggs out and put then in cold water. add frozen peas and cook till rice is cooked ( about 4 more minutes). meanwhile peel and mash eggs and flake up a bit of fish ( hot smoked salmon or smoked makeral(sp?).

For the kids I stir in mayo and greek yoghurt. For adults I add to this curry powder and some frozen ready chopped parsley. 15 mins to plates and jobs a good’un.

Pasta, once cooked tip in a tin of beans, warm through and grate some cheese in.

Pasta, once cooked add tinned tomatoes, tuna and chilli powder.

Omelette with jacket potatoes from the freezer.

Cheese toasties.

Also cheats cheesy pasta. boil pasta with whatever veggies you have (just frozen sweekcorn and peas in an emergency - but courgette and carrot etc make it more interesting). Mix cream cheese and grated strong cheddar in a bowl and microwave till melted and stir well. add to pasta and veggies. Can add finely chopped gerkins, capers and parsley ( frozen) if adults want something more sophisticated

Also Campbell's condensed soup makes a good base for pasta. Mix it through after cooking pasta - the mushroom one is good. No need to dilute.

Tonight we had cheese and mushroom omelette and salad. Scrambled eggs on toast is also really quick. My kids like quiche with either salad or veg. They also like a picnic style tea - cheese and crackers, carrot sticks, grapes etc.

I make a smoked haddock omelette. You would have to be organised and have the haddock precooked for it to be super quick but it only takes about 15 minutes to poach the fish.

Poach a couple of fillets of smoked haddock in half milk/half water.

Beat 6 eggs. Grate some parmesan cheese. Chop either parsely or chives or dill or all 3.

Heat some butter in a big frying pan. Mix the herbs and half the cheese with the eggs and start your omelette.

Flake the cooked fish and sprinkle on top of the omelette and the rest of the cheese plus salt and pepper.

Finish the omelette under a hot grill.

Once its cooked slide it onto a plate, cut into portions (its very filling) and serve with a big green salad or green veg.

I have done it with salmon too, and I reckon it would be nice with one of those prechopped fish pie mixes, or you could buy precooked salmon fillets.

It's only an omelette but the smoked fish and parmesan cheese and the herbs makes it quite luxurious to eat.

Pasta, pesto, cherry tomatoes (chopped in half), and some pre-cooked chicken. I usually use leftover chicken.

Cook the pasta and then just chuck everything else into the pot at the end to mix it all together.

Sorry, I missed the 'vege or fish' part!
No chicken then, but pasta, pesto and tomatoes is still nice. Probably with some salad.

This is one of my favourite quick deserts:

Heat frozen blueberries in the microwave, till they're just hot, They go all juicy. (I don't add any sugar, I'm not aiming for a syrup, just hot blueberries).

Pour onto ice cream.

Done! Delicious :)

This from BBC Good Food is one of the few dishes we’re still cooking 15 years after it first appeared in the magazine. Again, it takes as long as the pasta takes to cook:

Pasta and Roasted Peppers:

Cook the pasta (caeserrici or fusilli)
Heat olive oil in a small pan and add three large chopped roasted peppers from a jar. Heat for a couple of minutes then tip in a pack or garlic and herb cream cheese (Roulé or Boursin) and most of a tub of crème fraiche. Stir until smooth then take off the heat.
When the pasta is nearly done, tip in a cup of frozen peas.
Drain the pasta and peas and stir in the creamy sauce.
Sprinkle with torn basil leaves (optional but lovely).
Serve with Parmesan or veggie equivalent.

You can use up the rest of the crème fraiche in a tomato pasta sauce.

Meant to say, add the peas to the pasta water, not to the sauce.
