I’m looking for some inspiration - if you could make your absolute dream panini right now, what would be in it?

I think mine would be pesto, mozzarella, tomato and chicken.

I was thinking about roasted veg and mozzarella the other day but I was worried the veg would make it soggy, I assume it doesn’t?

I didn’t know it was panino, you learn something new every day. Every cafe etc I’ve ever had one from call it a panini and I assumed they would know their products name so I always called it that too!

Tuna, cheese and onion. Used to have that at a soft play cafe I took the dds to when they were small. The lady that ran it used to put it on the grill when she saw me parking the car Grin

If you want to do roast veg like courgette or aubergine, you need to salt them and then wash and dry them before you put oil on to roast them. For some reason that makes them less wet.

Yes, lots of cafés get it wrong (although if there is a bit of the menu with many different choices then the plural would be correct). I have Italian friend who is very strict on this. She also does a great spiel on the definition of a Margherita pizza.

Regarding panini pedantry I believe it's like cappuccino being the singular and cappuccino being plural.
I've get to hear anyone be wanky enough to ask for two cappuccini in Costa though.

Mine would be the same as yours, OP, except that I would have sundried tomatoes instead of fresh. And I might add a couple of sliced kalamata olives if I was feeling really decadent.

I don’t eat cheese but when my sister came yesterday I did her a fig, Gorgonzola and red onion chutney panini. She declared it the best thing I’d ever made. I couldn’t decide whether to be thrilled or offended.😬
