Solo dinner ideas

Hit me with your favourite meal for one ideas. DH is at work and DC are eating at after school club and nursery.
Not got much in but can pop to the local coop if needed. Save me from a standard ready meal please.
No omelettes as I had one last night!

I often make pasta. Cheap and simple sauce made of a tin of chopped tomatoes, and roughly chopped onion, red/yellow pepper and chicken (though sometimes I leave out the chicken. Takes a couple of minutes to chop the veg/ meat and seal the edges, then I let it simmer for 10 minutes with a fair whack of oregano before putting the pasta on. All told it's about half an hour, most of which is loitering on my phone while things sort themselves out on the job. The really good thing is that you can make enough to have leftovers for lunch the next day, which saves tomorrow's cooking as well!

I almost always go for a steak or chop when it's just me. Lovely salad or green veg on the side. Maybe some mushrooms or similar. delicious.

I'd have a ploughman's style tea - crusty bread with real butter, meats, cheeses, pickled onions, posh crisps, maybe a slice of quiche or a mini pork pie. With a large glass of crisp, cold white wine and something good on telly or a read of my kindle.

Salmon, steamed jersey royals and asparagus and béarnaise sauce. It’s what I had last night and it was delicious. Considering a repeat with steak tonight.

I often have fish, sea bass or plaice or halibut are some favourites. Quick and easy to cook, serve with just a simple vegetable, green beans or at this time of the year, asparagus.

Other favourites are steak, mussels, chicken Caesar salad.

Pan fried salmon filet with a fennel and green apple salad. Simple and delish.

If I really want to treat myself I will make a proper spaghetti carbonara.

Sometimes if I'm lazy it will be crisps, cucumber and wine 😆

Carbonara- spaghetti garlic butter egg parmesan/some sort of hard cheese bacon/pancetta (depending on how well stocked your house/local shop is). BBC food recipie. It's amazing Grin

My solo tea tonight is baked camembert and crusty bread. With chilli jam.

And a couple of glasses of wine.

I've been feeling shit all week and I've finally got my taste buds back today, DH is on nights and I'm sacking off the ironing pile to snuggle with my dog.

Definitely carbonara, like others have said. My DH and DS hate creamy pasta dishes so if DH is away and I've got DS to bed at a reasonable time then it's proper carbonara, sat in front of the TV in my pjs. Heaven.

Oh I am so hungry now and cannot decide.
Carbonara sounds good, as does the Camembert with bread. Though I was thinking fish with asparagus and jersey royals as DH doesn’t eat fish.
