Evaporated milk

Does anyone dilute it to use as regular milk, or is it always used as-is out of the can?

I remember in the 60s, when we were living in a country where cows were not routinely immunised against TB, DM would not let us have anything made with fresh milk. She would reconstitute powdered milk or evap - all brought from England, of course.

I told this story at work today, and everybody was amazed. None of them ever dilute evap or reconstitute powdered milk. Evap is always poured over puddings, powdered is stirred directly into drinks or used as-is in recipes.

Yes I've done this on many occasions in the past partly because it's much easier to store and partly because I actually prefer the taste of it even now as always have a can in the cupboard sometimes used for desserts and other times used for milk although it has been a while since I've done that.

I think back in the day, evaporated milk was made up with water to feed to babies Confused

Yes, I've got a 1960s Dr Spock, and it gives recipes for baby formula using evap, water and sugar.
