I have loads of bananas and they're too ripe. What to do with them? I've rather do a bread/loaf than muffins but there are about amillion of them and I can't choose.

I use nigella’s from domestic goddess. Works every time.

Tana Ramsey’s is great!

Why not freeze them and make banana ‘ice cream’ in a food processor?

None of us like ice cream unfortunately or that would be a great easy option.

This www.bbcgoodfood.com/recipes/2249656/brilliant-banana-loaf

So easy and I bake it in cupcake cases.

I do Nigella's one too.

You can freeze the manky bananas to use in baking when thawed.

I sometimes make actual banana bread too, rather than a loaf cake. It makes wonderful toast.

I've just realised I don't have enough butter, only some Stork left over from DD's food tech lessons. Would that be ok in a banana bread?

Mine is based on a Simon Rimmer recipe from bbc good food website.

It's always 3 bananas but he adds cooked butternut squash and a handful of pecans. Sometimes I don't bother or use different nuts or some coconut. I always add spices and or vanilla but the rest of the mix is 9oz flour, 5oz sugar, 1tsp baking powder,5 tbsps of oil and 1 egg. 160 fan for an hour.

It works with any flour, any sugar and any oil.
