Favourite way to use leftover roast chicken?

I have some in the fridge and want to do something different with it for dinner tonight. Any ideas please?

Soup. I roast the chicken. Make stock. Fry off onion, carrot, celery, leeks and mushrooms. Add the stock, tarragon and left over chicken. Another stock cube and some water - about 300 mls. Simmer for an hour or thereabouts. About twenty minutes before the end add some fresh single cream - probs about 100-150 ml. Absolutely delicious and even better reheated the next day when the flavours have come through.

I'm not sure anyone else would want this, but DH and DS love roast chicken because I make a chicken rice thing which shouldn't work, but does.

Slowly fry chopped onion and lots of different coloured chopped peppers with some garlic. (if I have other veggies I want to use up eg courgettes, aubergine etc, I add them too). Once soft, add fennel seeds and stripped roast chicken. I have rice cooking at same time. Once rice is almost ready, add to the pan with the chicken and peppers, then pour in some wine and let it bubble away and finish off the rice. Add generous amount of soy sauce and, if I have some, lime juice. Eat. It sounds a bit odd but it works and goes down really well at our house.

I use Jamie Oliver’s recipe for braised lettuce and peas, and just put the leftover chicken in to warm up along with it. I top up the stock to 400 ml to allow for a slightly longer cooking time.

We use a leftover leg and breast, each left whole, because it’s just two of us, but it would feed probably feed four people comfortably if the chicken was sliced up instead. We have it over basmati rice but it would go nicely with potatoes.

Otherwise I make Caesar salad. Or sometimes quick chicken pie - chicken gravy and veg into little gratin dishes with a lid of puff pastry.

Risotto, made with stock made from the leftover chicken bones, with mushrooms, bacon, roast chicken and parmesan.

Heh so do I. Well not the mayo. But I strip the carcass of all the hidden goodness, sprinkle with salt and sigh...happiness.

Like Mother87- slice of bread and butter, make some fresh stuffing (or left overs if you have any left) plus chicken and lashings of mayo or cranberry. Yum!
