A tray bake of aubergines. Courgettes, red and green peppers, onions and cherry tomatoes, drizzled with olive oil and balsamic vinegar. It tastes delicious and looks really colourful

Home made pizza with masses of veg on top like peppers, courgettes, onions and chillies. I always make a tray bake sized one because it's just as nice cold the next day.
Stuffed baked potatoes - scoop the insides out of halved baked pots and mix with what you fancy, like cheese/leek/onion. Scatter more cheese on top and brown in the oven. You can do similar with sweet potatoes.
Mixed roast veg is very good for using up odds and ends. I just bung it in a roasting tin after chopping it up with lots of garlic (specially like butternut squash, courgette, peppers, onions, aubergine, carrot), splash well with olive oil, roast till some bits are nice and crispy. Scatter with coriander or parsley before serving with good bread.

-Tacos with black beans, corn and roasted chickpeas
-Pulled jackfruit chilli/on jacket potato/with quinoa/enchiladas/chilli cheese fries/nachos (usually make a big batch and freeze half so it's there as a backup meal)
-Veggie burgers. Our treat option is the Beyond Burger, but I make tasty homemade onion bhaji burgers (look for the Bosh recipe)
-Crispy tofu stir fry
-Seitan blts
-Roasted chickpeas, banaganoush and other kinds of mezze bits
-Mac and cheese bake (mac and cheese with addition of veg, often spinach or chard + mushroom or corn)

Cannelloni (breadcrumbs, ricotta, spinach and cheese filling), with tomato sauce and creme fraiche (instead of white sauce)

Lentil & walnut ragu and pasta ]] - So easy to make but DS loves it, it is his favourite pasta sauce.

You need a couple of unusual ingredients (nutritional yeast and liquid smoke) but they really give a good flavour and both last for ages - I just order them from amazon

mac & cheee with roasted butternut squash

Green risotto (green is from mashed up peas) with baby spinach salad

Incredibly easy and tasty Falafal & Halloumi burgers with toasted with pita breads and salad.

Spaghetti rustica.
The meat version has diced bacon but I make a veggie version with cashews.
Stir fry some onions, peppers, garlic, fresh chilli, green beans a few cherry tomatoes and anything else you want to chuck in.
Fry some cashews in oil and salt.
Cook some spaghetti.
Mix altogether.
Grate a little cheese on top if you like.

Cauliflower cheese with pasta - so an amalgam of Mac n cheese & cauli cheese. Some people suggest broccoli too but I'm not keen. I always use coloured pasta so it looks more appealing. I sometimes add onion & garlic & sometimes top with sliced toms.

I'm a veggie myself but DP and DD aren't. Things we all like macaroni cheese with broccoli and cauliflower; lentil dhal; omelettes plus a couple of new additions chick peas and spinach curry; pasta with aubergine, tomato and mozzarella which I pop in the oven so the mozzarella melts.

I like halloumi panzella salad, however I like fruit grilled or roasted.( I grill the peaches ,)
When my lads were small they liked meringue with grilled pineapple topped with creme fraiche.

I like roast veg ( peppers, egg plant, red onion with grapes and plums. Once I have my basic mixture o use it in a wrap or stir it through pasta or have it with couscous sometimes I just add cheese at the end to melt.

For a super quick favourite soup I fry frozen onions, add frozen sweet potato and mushroom with some veg stock. Once cooked, blitz and add salt and pepper AND MOST IMPORTANTLY a tablespoon of lemon juice. once served put some. za'tar on top to garnish made n minutes, cheap as chips.
