what shall I cook tonight?

What are you having?
I struggle to decide!
For me and dp.
He normally cooks as I work in the evening.
He does chilli, lots of Indian food, roast,
He doesn't like chops or risotto or 'stew' or pies
Any ideas for something nice?
Going to the supermarket soon

We're having either kale sautéed with chorizo with a fried egg on top and garlic bread, or mushroom and courgette creamy cheesy pasta.

Seared tuna steaks, new potatoes, green beans, hard boiled eggs (deconstructed salade Niçoise!)

Boiled egg curry

Frittata

Slow roast pork belly, potatoes roasted with lemon and fennel seeds till they go fudgy, sharply dressed green beans on the side

We are having steak pies , mash , carrot and turnip and marrowfat peas with gravy . We are all full of cold boo boo ! Comfort food it is !

We are making our own burgers (got lovely mince from the butcher), and I’ve bought some nice brioche buns and all the trimmings for them.

How about a Mexican inspired frittata using the chorizo? Add peppers, onion, tomato, cheese and coriander.

We're having a giant pasty. Potato, leeks, cabbage and cheese done in a pack of pastry folded over. With salad. It's a very lazy pie.

Possibly salady stuff - feta, tomatoes, rocket and crusty bread. Or smoked cod with cabbage, maybe in a colcanon with a poached egg.

I'm totally on board with the idea of a frittata. Just an FYI, the chorizo sold in England is Spanish and not Mexican. Mexican chorizo is raw, uncooked pork while Spanish chorizo is cured and smoked.

But yeah, definitely make a frittata OP.

Or make a salad nicoise

OP- I'm making a lazy roast tonight- chicken breasts, frozen roasties and loadsa veg!

@Rollerbird yes there is a base recipe from Nigella's How to Cook - see attached. But now I often go off piste, so I'll sometimes use regular pork sausages and add fennel seeds and chilli flakes, fry peppers and onions together with the sausage, all sorts, leave out the egg and we have sriracha or kimchi instead. You can use any kind of greens as well, except spinach which cooks down too much. But chard, Savoy cabbage, spring greens, hispi cabbage, cavolo Nero all work. It's a great way to get a lot of greens in!
