What can I do with eggs?

I recently started eating eggs after years of not.

I take boiled eggs in a packed lunch, but need some more inspiration. I prefer the yolk solid and am trying to low carb as well.

So, what are your favourite things to do with eggs please?

Omelette for breakfast?

I made quiche last night.

Mini quiche for your breakfast or lunch? I make them in a silicon muffin tray and you can add any filling you like to stop getting bored!

Carbonara with courgette noodles (actually what I’m having for dinner tonight!

Scrambled with spring onion and a little cheddar, plus other veggies like peppers or cherry tomatoes, spinach etc.

Mini omelettes (baked in a cake tin) or crustless quiche

Cheese omelettes with mushrooms, ham etc.

Scrambled egg with smoked salmon trimmings

Frittata/Spanish omelette

Tuna Nicoise is one of my favourite low carb lunches (I don’t put potato in, I didn’t realise it was meant to have potato in it until i read something on here!).
A couple of weeks ago, through fat fingers and late night online food shop ordering, I ended up with 4 dozen eggs. Lucky we like them!!

For a packed lunch I'd suggest Spanish omelette or a frittata. I've also made quick mini quiches using those stand and stuff soft tortillas.

lots of ideas here. I do like a good omelette. Think of it as a wrap and you can stuff it with lots of goodies.

French toast with cinnamon and honey as a weekend treat.
Omelette (French or Spanish)
Huevos rancheros (it's Mexican - google it)
Poached eggs on toast

Polenta, asparagus and a poached egg, yum. Also Mediterranean vegetables roasted with eggs between, you can add sausages too if you like. Eggs are very versatile

Tin of beans in an oven proof dish crack two eggs on top. Oven for 20 minutes.

pancakes

Scrambled eggs on toast/pasta (kids favourite)
Use up leftover risotto, reheat in frying pan, throw eggs and bacon in, stir til cooked.
