Anybody available in the highlands? To witness a marriage

Not sure if I've posted in the right section but hoping somebody can help me!!
We've decided to "just get on with it" and get down to a register office but have nobody as our witnesses!!

My parents married in Edinburgh (I know that's not the Highlands, bear with me) and literally pulled a bloke of the street to be their second witness. A family member was the only other guest so they were the first witness.
This bloke went down in legend in our family. They never saw him again.
