Mine is this key lime pie purely because it’s so simple and easy and everyone is always very impressed with it. So rich but so good!

I love making this spiced vegetable biryani link because it all goes in one large oven tray in the oven, it is vegan and very delicious. However, BIG WARNING, the recipe specifies an insane amount of rice, probably more than double you need. I measure out 2 small mugs of rice for 4 of us (and double the amount of stock) and it is plenty.

This is really quick. I menu plan so will have whole chicken the day before with salad or jacket then use the chicken stock from that. I don’t even add the cheese or Parmesan just throw an extra veg stock cube in. You have to make sure the bacon is really crispy though for extra flavour. Speedy and delicious mid week meal. And it feeds the two of us for two days.

Sounds lovely. Is the mustard seed essential would you say? Will have to hunt some down if it is.

@bringbackthestripes i dont know if they are essential (haven't made it myself) but sainsburys have mustard seeds if you need them x

No, I don't bother with the mustard seeds or the extra chilli either as I Madras curry paste is quite hot. And I use turmeric instead of saffron.

Grilled aubergine spaghetti.
Absolutely love cooking this, so straight forward, and I tend to over make and there's enough for 4 people 😂

Great bibbi I have turmeric and was going to leave out saffron. I don’t buy fresh chilli either but do have an old jar of dried flaked red chilli so thought that would do but happy to hear the madras paste is enough

@Aimily oh that’s interesting, I never know what to do with aubergine past moussaka, will give that a try!
