Recipes for fussy toddler

Hello, might be too much to ask but I could anyone spare some time and give me some ideas?

My fussy 18 month old is so hard to please, I would come up with a few lovely recipes and she is eating really well for a while, then she off them and I’m back to square one. It gives me so much anxiety.

What do your toddlers like? Any easy, healthy recipes? She’s not allergic to anything so far, so anything goes.

at that age my dds liked:

lunch:

peanut butter (smooth) and sugar free jam sandwiches

cream cheese sandwiches

sweet potato and cheese quesadillas

spinach and banana muffins with fruit and a small pot of yogurt

cottage cheese + courgette pancakes and some fruit

dinner:

the inside of a baked potato + peas and carrots, all mixed up together. you can add some shredded turkey in if you like

pesto chicken veggie meatballs

salmon cakes with homemade ketchup (so you can control the amount of sugar/ salt content) and steamed veggies

I'd suggest you cook one meal for the family and eat together.
Just keep to low salt and not hugely spiced.
