How to use up several pints of lamb stock?

Soup!
Freeze in small quantities and add some every time you make a curry or bolognaise.

you could make some lamb risotto and then freeze the rest in individual ice cube trays, so when needed you can just defrost one cube in the microwave and it's ready

Yes, soup is a good idea. Do you think a standard veg soup would be okay made with a lamb stock?

I think I'm being unimaginative dim because I usually have either beef or chicken stock.

I'm out of ice cube trays but I'm going to dig out the dozens of little baby weaning pots that are around here somewhere!
