Best eggs on toast

Mine is poached eggs (ideally from my neighbour but if not then Burford Browns, on granary, black pepper, loads of salt, a few chilli flakes and a shit ton of ketchup. Mmmm.

Scramble eggs until just underdone, place on bread that has had lurpak applied, place in toastie maker with sauce - voila!

Two boiled Burford Browns, runny yolk, firm white, mashed in a bowl with lots of butter and sea salt and black pepper, and slathered on toasted sourdough. Mmmmm.

I can't fry or scramble eggs but I can make eggselent poached and soft boiled eggs.

Egg chopped up in a cup is great, it's two boiled eggs (hard, soft, somewhere in between it's up to you), sliced and buttered white bread that's been chopped up and then all mashed together in a bowl. Add seasonings as you desire.

Eggy bread, make a cheese or cheese and ham sandwich and then dunk it into the egg and fry, or just make normal eggy bread and dip it into ketchup.

Also slightly undercooked scrambled eggs on warm buttered toast with ketchup is amazing.

Fried duck eggs from our own free range ducks. Eggs collected fresh that morning. They have huge yellow yolks. I put a bit of ketchup and a few sea salt flakes on it.

If you can find free range garden gate eggs, it’s well worth it. They will be the tastiest eggs you’ve ever had.

Poached eggs on sour dough toast with a smattering of grated cheese over the top. Maybe with mushrooms fried in garlic olive oil if I can be arsed.

Never shop eggs. I always buy local and i will drive round to buy them. Little but if salt as they are tasty enough without. Proper salted welsh butter on a liaf from the li sl bakery.

This is the lunch I eat most days...

Lightly poached eggs with runny yolks (I've recently started poaching them in water in a frying pan as you lose less white).

Lightly toasted bread, butter, slice of ham, pop the eggs on top and grate loads of mature cheddar on top.

Delicious!

Fried egg sandwich with ketchup if I'm hungover.

About 35 years ago we stopped in a hotel in Chartres overnight on a family holiday (I was about 10) and had breakfast in a cafe next to the cathedral. The scrambled eggs were amazing. DDad spent the rest of his life trying to recreate them. I’ve taken this on now. These eggs have reached mystical, mythical heights in our family folklore. I think the trick is really fresh ingredients, frothy milk and real butter.

Poached eggs with runny yolks over a mound of buttery fried mushrooms on thick white toast spread with lashings of Lurpak.

On another note, I read yesterday that the secret to fluffy scrambled eggs is to put a little warm water into the raw egg mixture before cooking. Apparently it should always be water and never milk. Haven't tried it yet but does anyone know if it works??

I knew you were not supposed to add milk to scrambled eggs but not about warm water.
