Bought it two days ago was going to cook it today and it's gone brown. Surely I can't eat this?

Beef is prone to discolouring while still being perfectly safe to eat. That said, I've never seen it go that colour. Shock

I cooked mince that colour once when I was a teenager because 'it was still in date so it must be fine'.

It was categorically not fine.

Looks like the packet is bulging too, that's not a good sign

I'm a 'eat everything unless it stinks' girl. And even I would query eating that. Does it smell? If so chuck immediately. If not and you do want to risk it - don't serve it to babies, old people or those with illnesses.

I'd take it back too. I've done this a couple of times before when meat has gone decidedly dodgy despite being within date and stored properly. Sainsburys were happy to refund without question, no idea how other supermarkets deal with this.
