Anyone able to help me decide what to cook for Mil please?

It will be my first time looking for her.

I would say I'm a decent cook but our house is currently a building site so we have an old very small oven that has no temperature control and 2 good hob rings and 1 dodgy one.

DP has offered to cook but I would like to as she has cooked for me many times.

Was thinking nice basic Caprese salad and some crudités and dips to nibble on to start- we are in Southern Europe so have some lovely tomatoes already. Any ideas on a main?

She eats quite healthy, tries to keep white carbs down but isn't super fussy. She's originally from South America but has lived in the North of France for the last 20 years meaning tasty english stodge (my speciality) is out.

If you want to do something special find an authentic recipe and a supplier and make her something from her home country.

I would showcase some typical British summer food if that is your talent. Sole? Asparagus with soft boiled eggs ? Trout etc.
And make sure you do a fabulous pud like Eton Mess and try to source great cheese to see Britain at its best.
