I have me dh and 3 dc.
I have 2 dc with autism who wont eat alot of foods due to sensory issues and also one dc who had wheat and dairy allergies.
Over last few months we have had homemade pizza, burgers, chicken nuggets , a sort of fry up , beqns on toast and a sunday roast in fashion. All have several variations to suit the different diets. I am now looking for some less heavy meals to make but am struggle. Does anyone have any summer type meal ideas that could suit us?

DIY wraps? Eg: Chicken pieces, grated carrot, cucumber sticks (cut lengthways) some leaves, grated cheese, different sauces? Very adaptable!

Chicken skewers and diy wraps sounds good.

They wont eat any sort of fish not even fish fingers.

One would live of cheese sandwiches (which is what he takes in his packed lunch for school) if i allowed him to.
Its hard to feed them a well balanced diwt when they won't eat mlst things.

They love to choose and help prepare and cook but wont then eat it.

Could try omelette havent tried him for a while.

If they like beans, they might like enchiladas in gluten free tortillas. Leave the cheese off for the dairy free, and pile it up high for your cheese-fanatic! I use Jamie’s recipe www.jamieoliver.com/recipes/vegetables-recipes/veggie-enchiladas/
Have you tried egg fried rice?
I used to make these lentil slices for when my dc where weaning. Even though they’re now at school, they still ask for it. It feeds the four of us for a light evening meal with salad, and if we have any leftover it’s good for lunchboxes the next day. www.healthylittlefoodies.com/curried-lentil-bake/
