Easter menu??

I have 10 people coming for Easter Sunday and not sure what to cook. It'll be a full roast but I'm not sure what meat, lamb, turkey, or pork (or should I do two meats?). Also not sure if to do a starter or not. I'll prob do a trio of desserts for pudding.
Any suggestions or what you all having?

DH,DD and I are vegetarian, DS will eat chicken but not red meat.

DS will have a chicken breast (just roasted , plain)
I sancy doing something with filo pastry and spininach but I'll probably do that on the Saturday and we'll have a Quorn roast.
Roast potatos, steamed carrots, brocilli, peas, steamed white
cabbage Yorkshires,, gravy.

Easter I'd think lamb or chicken, (or both ) if you are feeding meat eaters.

No starters here (I don't do a starter for Christmas either)

Puddings -
something lemony , maybe a baked cheesecake .
an apple pie , must be nice crisp pastry and sharp apple ( Aldi do a really nice one , frozen)
something chocolatey Grin , chocolate Brownies or those Gu melting middle puddings (really quick to cook )

I have asked everyone for suggestions here
We're doing veg grills /fish fingers(for DS) , chips , salad on the Friday
Quiche and coleslaw, maybe baked potatoes on Saturday
Sunday dinner as above
Pizza ( I put the dough on to mix in the morning then rise slowly to cook later) on the Monday
