What do/would you have in a packed lunch?

DH is about to change his job and go self employed contracting. He takes lunches currently but a)they are really unhealthy (chocolate brioche, tinned mackerel, crisps, chocolate, energy drink, coke, water) and b)they are not enough for the physical job he is going to be doing.

He got fed up of cheese and pickle sandwiches, doesn't really like sandwiches anyway, and will consider an apple and banana when it gets a bit warmer.

Any ideas? I don't mind batch cooking/baking and freezing, but my brain just doesn't want to help and I am doing the shop tomorrow.
