Lemon Curd update

A couple of weeks ago I posted asking for lemon curd recommendations. Quite a few of you recommended Tiptree which I finally got round to buying on Wednesday. OMG ... soooo nice. I had planned to have it on hot cross buns but ended up having it on chocolate chip brioche and really enjoyed it. So much so I've also bought (to try over the weekend) lemon curd yogurt and I've just found a recipe on line for lemon curd cake which I'll bake over Easter ☺

@bagpiss - I really did. We sometimes get lemon cheesecake and didn't realise the yellow swirly stuff on top must be lemon curd cos as soon as I tasted it, it reminded me of the cheesecake which was an added bonus

Oh yes I use it in cheesecake, if you warm it a tiny bit it swirls in lovely. And it makes the best jam tarts 😍

Have you made your own lemon curd? Very good way of using eggs (if you've chickens)

my dad makes his own lemon curd and uses big dollops of it in Eaton mess and its totally delicious, unfortunately I cannot tell my dad just how good it is as he's one of those cooks that makes double portions of everything as standard, but if he knows your like something hell make quadruple

The lemon curd yoghurt is lovely with blueberries.

A really quick “cheat” cheesecake for lemon curd lovers is digestive biscuits smashed up, big dollop of ricotta, big dollop of lemon curd. Mix it all together with a spoon. Eat.

@chillychicken - that sounds like my kinda cheesecake. Definitely note that one down for the future

My tip - put all the ingredients in their packets or jars in the freezer for 20 minutes and then assemble the pud quickly. Prevents the meringue melting before it freezes.

Lemon curd yogurt is lovely served in a brandy snap basket.
