Favourite cocktail recipe

I'm hosting our book group tomorrow and (obviously after we've had an in depth discussion of the book) we planned to make a few cocktails.
I'll drink cocktails occasionally but never frequent bars where they're served normally have a wine or beer.
What are your favourite cocktails which might be quite straightforward to make at home (no dry ice please!)

Amaretto sours are delicious - I think you can now even buy premade disarano sour mix in supermarkets.

Gin fizz

  • gin, crushed ice, lemoncello top up with Prosecco

Elderflower gin- elderflower cordial, gin, crushed ice topped up with Prosecco. Serve with a cucumber garnish
Espresso martini- ice cold great quality coffee, vodka, shake with ice, strain and serve
Mojito- rum, ice, loaf and loads of lime juice and mint with simple syrup and a mere splash of soda water

That virgin pina colada sounds nice!
DH and I used to make a lot of mojitos when DS1 was little.

Cosmopolitan: 1 vodka 1 Cointreau 0.5 fresh lime 1.5 cranberry juice; garnish with orange peel

I’m planning on cocktails tomorrow night for DHs birthday, I’m going to make cosmopolitans, mojitos, martinis and definitely pinching that gin fizz recipe now! I might do a Cognac ginger and lime too, a sort of French Moscow mule and maybe, if I remember to buy pineapple juice, a pina colada. Would love to do a Long Island iced tea/ beach but can’t get ahold of sour mix.
