Please inspire me, I want it to be as healthy as it can be with what I have in the fridge:

Low fat mince
Sausages
Bacon

Beetroot
Parsnips
Carrots
New potato’s
Onions
Asparagus

I'd roast all the veg up and dry fry the bacon and mix it in. Like a hot bacon salad

Cottage pie with a sliced potato topping instead of mash. Or sausages with mixed roast vegetables.

MerryTwinkletoes · 02/04/2019 15:59

I'd make a chunky veg soup, then chop up and dry fry the bacon and sprinkle on top like little bacon croutons!

I'd make a bolognese type pot with most of the veggies (not the beetroot and parsnip), the bacon and low fat mince (or just the mince if you want it very healthy) and serve it on top of the potatoes.

CasparMum · 02/04/2019 15:59

Do you have eggs? You could use the potatoes, asparagus, onions & maybe some grated carrots in a frittata

Raera · 02/04/2019 15:59

Cottage type pie?
Mince and onion in base with carrot and parsnip mash topping, asparagus side.

NeverHadANickname · 02/04/2019 16:00

I'd do a sausage, potato and veg tray bake.

Jackshouse · 02/04/2019 16:00

Roast root veg with sausage. Just whack it all in he oven.

AndNoneForGretchenWieners · 02/04/2019 16:01

I'd make burgers with the mince and onions, then grill them and eat with new potatoes and parsnips.

BibbityBobbityEars · 02/04/2019 16:03

Meatballs, diced carrot and onion in the sauce, new potatoes

hidinginthenightgarden · 02/04/2019 16:36

Mince onion and potatoe for hotpot with carrots parsnips.
Bacon and asparagus soup with leftover stuff.

HoneysuckIejasmine · 02/04/2019 16:38

Pan haggerty.

stucknoue · 02/04/2019 16:56

Sausages and roasted veg?

Doghorsechicken · 02/04/2019 17:12

Thank you, some great ideas! I’ve gone for garlic and rosemary roasted veg with homemade beef, beetroot & chilli burgers. Never made my own burgers before so I’m quite excited! Grin
