What's everyone having for dinner tonight?

We had pasta bolognese last night and I'm stuck for ideas and I just don't fancy our usual go to meals (stir fry, baked potatoes, fajitas)
Inspiration would be much appreciated.

I’m cooking out of this book this week and it’s absolutely delicious.

We had the harissa green beans, with flat bread, hummus and cucumber and pomegranate salsa last night and it was so yummy.

This week we've got lined up:

Pea risotto
Chicken Caesar salad
Saltimbocca, except we have no prosciutto so it's just veal and sage and potatoes with veg. You could use pork instead.
Homemade burgers and wedges
Fried halloumi with caper and lemon dressing.

Tagine and couscous. You can’t beat a good lamb tagine, but my Dc aren’t too keen on lamb so I usually do chicken or a veggie one.
Last night we had tuna and sweetcorn burgers which are always a hit.

BBC goodfood chorizo and tomato risotto tonight- easy and cheap and so so yummy!

I did herby prawn burgers last night
Blend coriander and spring onions then add prawns
Fridge for half an hour
Fry 3-4 on each side
Serve with lime mayonnaise
Was delicious

Last night we had chicken tikka traybake.
Chicken thighs, peppers, onions,sweet potato all covered in paste mixed and shoved in oven for 45 mins. Tonight I’m out so it will be toast likely with beans

I hate thinking of what to cook, but don’t mind the actual cooking part. Also get so bored with the same meals.

I used to just google a couple of ingredients I had and see what recipes popped up, but now I use Pinterest, I find the pictures helpful for deciding if I want to try it.

Tonight's dinner is gleaming halo healthy as DS has a rowing trial tomorrow: Brown rice with sushi seasoning, grilled salmon, crispy kale, edamame beans, kimchi

Other suppers this week are:
Red wine braised lamb shanks with veg and swede puree
pasta with wild garlic pesto and grilled chicken
Tofu curry
Red lentil and sweet potato stew

Our meal plan this week:
Mon - build your own burrito
Tues - chicken kievs and salad
Weds - cod roasted with bacon, diced roast potatoes with garlic and sage, purple sprouting broccoli
Thurs - spinach & ricotta ravioli
Fri - pizza night

This week we're having:

Fish stew (bbcgoodfood "simple fish stew")
Chicken and olive casserole
Vegetable & green lentil curry
Chicken schnitzel with Caesar salad.

Every Sunday I spend an hour looking through the bbcgoodfood website and meal plan from that. I try to do at least 2 new recipes a week and then keep a folder of our favourite recipes for future.

Working late tonight so an omelette or avocado on toast (depends how ripe they are!)
Tomorrow: ratatouille with something (probably pasta and mozzarella)
Thursday: crispy tofu, veg and noodles in a peanut lime dressing
Friday is dahl, saag paneer, and lemon coconut rice
Saturday i’m out for dinner
Sunday slow roast lamb, smashed potatoes with whipped feta and mint, and loads of green veg

My son has to follow a low FODMAP diet, which occasionally causes me issues when I'm struggling with the fibromyalgia, but some of our favourites are:
Slow roast lamb with ratatouille (using fennel and leak greens instead of onions)
Chilli con carne
Sweet and sour pork/chicken
Chicken and oyster mushrooms from the Fuchsia Dunlop book (in fact a fair few things from there as they are quick and tasty and easily adapted for low FODMAP)
Stuffed tomatoes, peppers/whatever and salad
Ham salad
Roast chicken
Home made fish fingers
Aubergine parmigiana
Pasta with home made pesto
Risotto
Kedgeree - really easy to do in the rice cooker
Cod with chorizo and spinach

I'm lucky that DS loves salad leaves, so we'll happily tuck into a salad midweek while DH works away in London. We focus on things that are either quick or require very little doing, and since he's nearly 13, DS is good at helping prep veg etc. Slow roasting means cheaper cuts and maybe 5 mins prep before shoving it in the oven. If you don't already have 'Every Grain of Rice' by Fuchsia Dunlop, I'd recommend it as it is full of delicious and quick recipes, and with enough variety that you can adapt things to suit what you have to hand.

Grumpy I LOVE that cookbook. It's my go-to for so many dinners and just shows how different Chinese home cooking is from the stuff you get in restaurants! My 2 favourite things in there are the least "recipe" recipes ever - the tofu topped with avocado, and the scrambled eggs with tomatoes. Probably make them each once a week.
